Disney is one of the best cruise lines available. For families traveling with young children, I don't think their is a better line out there. They take such good care of the children and keep them entertained so well. So many times the kids don't want to leave the clubs. Most parents see the kids very little of the kids, when they are allowed to spend time in the clubs. Your son will have an awesome time in the clubs, I myself have often wanted to play in the clubs, they look like so much fun ;-)
The best thing about Disney is that they offer something for the whole family. While your son is having a blast in the club, you and your wife can enjoy yourself. There are adult only areas if you want some quiet time, you also have the spa, the many activities going on each day, and so much more. I don't think you or your son will be dissapointed, or bored. One thing I recommend for a special evening is taking your wife to Palo's, it costs a little extra, but is well worth it (on a four night cruise you get to experience each of the restaurants and one you will get to go to twice. Since you have a child, they will probably send you to Animator's Palatte on your extra night. I think this would be the best night to go to Palo's, but you definitely want to experience each restaurant at least once). The food is quite good, it is adults only so it is more quite and relaxing, it makes for a very nice evening. You can have your son in the kids club, and you can feed him before dropping him off, or he can have dinner there. It is also nice because Disney will give you a pager so they can contact you in case they or your son needs to get a hold of you.
As the other answer said, be sure to go to all the shows, they are spectacular. The kids love them, and for the most part, I think the adults do as well. I'm not a huge Disney fan and I love the shows, they are really great.
Be sure to read your Navigator over and mark off all the things you want to do each day. It is a good idea to do this with the whole family so that everyone gets to do what they want. That way you can plan your days so you know what you want to do, your wife knows what she wants to do and your son knows what he wants to do and you can also find many things to do together, there is a lot for everyone.
My other suggestion is to book some shore excursions. There is usually something for everyone, you can go to Disney's site and look everything over to see what interests you the most. You can find sites online and also companies in port that will offer you lower costs, just be very cauitious if you plan to do this. The first thing is that you don't know what you are getting into. The cruise line researches their excursion companies to make sure they are insured, safe, etc. so you have a little more comfort this way. Booking on your own you take the risk of going with a company that isn't legit, or even worse. If you plan to go outside of the Cruise line, be sure to do some research first to make sure they are okay. Also, the cruise line can keep in contact with their shore excursions companies. If the situation would arise that you are delayed from some reason on the excursion, but it is time for you to get back on the ship,the ship will wait when you are on their excursions. If you aren't, there is a chance that you could get left behind.
Again, your family is going to have a blast. There are a lot of great sites on the internet to check out to get your family excited before going and also to do some research. They give all the lastest Navigators, to show what different things are gonna go on and stuff and little hints and tips and what to look foward too.
Make sure to go to all the Shows, they are put on wonderfully, the kids love it, and theres hidden humor for the adults (especially in the Hercules play)! Your 8 year old is gonna love all the activities on board and at disneys private island Castaway Cay!

Congratulations!! You will love it. We have been on 2 Disney cruises and can't wait to go again. It is the favorite vacation of both us, as parents, and our kids... even over the Disney parks.
Check out disboards.com. They have an extremely active cruise forum, with links to the daily navigators (schedules) menus, itineraries, excursions, etc.
