my grandchildren are always complaining that they miss out on sauce

Country Spice Pudding Cake

Ove 375F 8 inch square pan.

Pudding
1c. flour
2 tsp. baking powder
1/2 c. brown sugar
1/4 tsp. cinnamon
1/4 tsp. salt
3/4 c. raisins
1/2 c. milk
1 tsp. vanilla
Sift together dry ingredients, then add raisins. Stir in milk and vanilla, mix well. Spread evenly in square pan.

Sauce

1c. brown sugar
1/2 tsp nutmeg
1 tsp. cinnamon
1/3 c. butter
2 c. boiling water
1 tsp. vanilla or rum

Combine all except vanilla. Stir well to dissolve sugar, then add vanilla. Pour sauce over the pudding and bake for 30 - 35 minutes. Test with a toothpick.

put some jam or lemon curd in some ramekins add a sponge mix leave room to rise bake till risen run a knife round and turn out like a steam pudding you can also melt some in a pan to add extra if needed xx
