I haven't met a child yet that didn't like chicken tenders, french fries and spaghetti! Here are some ideas for you:

1. Fruit kabobs using strawberries, pineapple and bananas. Make a "dip" out of yogurt or sourcream, brown sugar and vanilla.
2. Make your own fries! Purchase frozen ones and bake them until crisp. Toss with kosher salt and parmesan cheese.
3. Chicken tenders. Marinate in Italian dressing overnight and grill. Serve with ketchup or ranch dressing.
4. Baby carrot stix with peanut butter, honey, and raisens
5. Fruit smoothies with yogurt, bananas, honey, and other fresh fruit. Or you can make chocolate banana smoothies.
6. Spaghetti with cheese: Pick an unusual shaped wholegrain pasta ( such as Barilla multigrain) and boil in chicken broth until tender. Toss with olive oil and top with grated parmesan.
7. Make your own sauce by blending up veges until they are smooth and adding Italian herbs, cheese, and so on to pour over pasta, chicken breasts, etc.
8. Frozen popcycles made with fresh fruit and juice

Get your kids involved in menu planning and food prep. Let them help you in the kitchen and encourage them to come up with meal alternatives. Food isn't something that should be forced on them, but something that they can have fun and enjoy preparing. By encouraging them to help plan the menu you are letting them know that you respect them and that they are an important part of the process. Good luck!

As harsh as this sounds, if they don't eat many meats or vegetables they will grow up with very bad eating habits and probably have bad heath. An eight year old child is still young enough to be taught to eat properly. Don't conform to her/his fussy eating.Instead make nutritious meals. Even a fussy eater gets hungry enough eventually to eat the food you've cooked. Be a good example for your child .

Fussy eaters are hard to deal with but I think you nead to put vegetables into food so they are not aware the vegies are in there like zuchini fritters, boiled fried potatoes with fish (really its fish and chips) or spaghetti with a tomatoe and vegetable sauce. pasta with cheese sauce (macaroni cheese). Baked potatoes with fillings. I have a friend that was not encouraged to eat fruit, vegetables and meat and as a result they became an obese adult with really odd etaing habbits that basically osterised them. They would only eat chips, just thin cut chips, chocalate, chocalate milk, cerial with no milk and fried chicken - thats all. She claimed that vegetables were awful and would only order a steak chop it in to bits and push it around her plate when she went out with others to a restraunt. For this childs health and well being you really need to get them to eat properly.

pizza and chips (you may be able to hide some veg in this!)
fish (if they like it but not meat)
tomato pasta
cheese and marmite sandwiches
jacket potatoes with cheese and baked beans/tuna
rice in a sauce

oo this is actually a lot harder than i though! I think the best idea is tomato pasta or some other cheesy oasta, as it is easy to make, and i am sure they will like it...

Don't tolerate fussy eaters, make them eat whatever you put in front of them unless they are physically unable ie allergic. Otherwise they will grow up being very unhealthy.

Or they mini pizza thing that other chick said sounded pretty tasty.

English muffin mini pizzas

split English muffins
spread with pizza sauce or any kind of pasta sauce
sprinkle cheese
bake in oven for about 10 mins or until cheese melts.

Also, grilled cheese sandwiches
