Glutinous rice maybe used to thicken the ube jam. The original recipe for ube is, the purple yam, sugar, condensed milk and butter. Others substiture or supplement with cheaper/less expensive and easier to find starches such as yellow kamote or sticky/glutinous rice. In either case, you must use food coloring to make it purple.
