I am looking for a relatively simple but elegant chorizo appetizer recipe to be served at a wine tasting party. Do you have any suggestions?

Sausage stuffed mushrooms..

Cook sausage and mix with breadcrumbs and cheese (monterey jack or mozzarella) and green onion
set aside extra cheese

Heat oven to 400 degrees.
Remove stems from mushrooms; finely chop enough stems to equal 1/2 cup and reserve (save remaining stems for another use).
Place mushroom caps in a bowl and toss with 1 tablespoon oil.
Arrange caps cavity side up on a shallow baking pan; set aside.

Stuff mushroom caps with sausage mixture; sprinkle with remainder of cheese.
Bake 10 to 15 minutes, until mushrooms are tender.

Chorizo Cheddar Stuffed Portobello Caps


6 servings 30 min 10 min prep

12 ounces portobello mushroom caps (about 6 caps)
1 lb chorizo sausage, loose (I use Mexican Chorizo doubled)
3 ounces cheddar cheese, shredded
1 ounce green onions, chopped
1/4 cup red wine

Mix together the chorizo, green onions, and cheddar cheese.
Stuff mushroom caps with the mixture evenly, place in a greased baking dish with the red wine.
Bake at 375 degrees Fahrenheit for 20-25 minutes or until sausage is cooked through and mushrooms are softened.

Recipe: Appetizer: Chorizo-Stuffed Mini Potatoes
Makes 36 hors d’oeuvres

18 small red potatoes (about 2½ inches across)
3 Tablespoons extra-virgin Spanish olive oil
1 cup finely diced chorizo
½ cup finely chopped onion
2 garlic cloves, minced
¼ cup fresh bread crumbs
¾ cup finely grated Idiazabal cheese
10 pimento-stuffed Spanish olives, finely chopped
2 tablespoons chopped cilantro
cilantro leaves for garnish

Preheat oven to 400F. Cut potatoes in half. Cut a little slice off the bottom of each half so the potato half can sit flat and scoop out the potato flesh with a melon-baller, leaving a ¼ inch thick shell. (Discard the flesh or reserve for another use if desired.) Toss the potatoes with half the oil and salt to taste. Arrange them in one layer, cut side up and bake for 15 minutes. Turn them over and bake for 10 minutes more or until tender and lightly browned. In a skillet cook the chorizo over moderate heat in the remaining oil until lightly browned. Remove from skillet with slotted spoon to paper towels to drain. Discard all but 2 tablespoons fat from pan, add onion and cook over moderately low heat until translucent, about 5 minutes. Add garlic and cook 1 minute more. Stir in chorizo, breadcrumbs, cheese, olives, chopped cilantro, and salt and pepper to taste. Spoon mixture into baked shells, mounding it, and bake for 10 minutes or until heated through. Garnish with cilantro leaves.

Fry chorizo with onion and garlic, stir in about 4 beaten eggs and scramble add 1 cup white grated cheese and 4 ounces cream cheese. Toss in some chopped cilantro and tomatoes - serve with chopped avacaco and sliced olives on top and tortilla wedges with lime slices

AVOCADO CHORIZO BITES

1 ripe avocado

1/2 tsp. salt, or to taste

1 tsp. lemon juice

2 to 3 tsps. chipotle hot sauce, to taste

Chorizo sausage, sliced thinly (if you can not find chorizo, pepperoni is a suitable substitute), as needed

Cheddar cheese, sliced thinly

Water crackers or any plain cracker, as needed



Puree avocado in a food processor until smooth. Place puree in a bowl, stir in salt, lemon juice and hot sauce; mix well.

Build your snacks starting with a cracker: Place a slice of cheese on the cracker; spoon some avocado puree on the cheese; place a chorizo slice on the avocado puree. (If you want to dress it up a bit, pipe the avocado puree on using a pastry bag and a large star tip.)

Serve snacks on a plate, or serving platter garnished, if desired, with avocado slices. Makes about 24 snacks.
