I recently tried to give up eating meat and I'm thinking of keeping my eating habits this way. Is it safe to only eat meat i.e. beef, pork, chicken, turkey, once a week? The other 6 days, I would be eating vegetables, soy, and seafood. Will I be lacking anything (nutritionally) if I eat meat that sparingly?

As long as you get a wide, colorful variety of fresh fruits and vegetables, you won't lack anything.

If you are looking at lowering your cholesterol, keep in mind that shellfish is very high.
