Maybe you could give out blank postcards with a stamp on them. Have a variety of postcards from all the places significant to you and your fiance. Or some kind of romantic postcard like these.

Put them in a cute little sash or decorative envelope. Attach a message that reads something along these lines "Thank you for sharing our special day with us. No matter what road in life you may travel, all of you will hold a special place in our hearts."

Instead of using gold rings to wrap around the thank you scrolls given at the wedding why not use a small chain of some sort. This symbolizes staying "linked" together as family and friends.

Depending on how many people you're having i'd suggest getting them stationary. Maybe something that has a quote on it about how even though we're far apart you're always in my heart. And you can maybe find a site that you can get bulk pens that have your names and the wedding date on them so that when they see the pen and stationary they think of you.

depending on how many guests get NY postcards and have your new address already wrote on them. the prepaid phone card is a good idea but that would get expensive pretty quick.

gwen stefani gave out krispy kreme donuts on her wedding as favors...they're rock stars they get away with things like that...dunno that circle could symbolize connecting?
if u have enuf money give out unisex white gold jewlery bracelets or rings
i love getting those miniature tiered cakes that u can take home with u when i go to weddings
or you could make a fancy album with really rich cover like light color suede or crocodile leather with pictures of the special moments captured with the guests at the wedding, u can give that out/mail out that later after the wedding

My niece found pretty silver luggage tags for her wedding guests. They could hold either a photo for a keyring, or an id card for a luggage tag. Good luck!

How about a magnet with a picture of you and your address. You can make them yourselves with business cards, computer and magnets.
