What an interesting observation and question...
I have 3 dogs, and I can safely say each of them will scurry backwards if I prompt them to back up, but it is more of a hopping back bounce, because they are eager to go forward or where ever they want otherwise.
I have never seen them walk backwards for their own amusement though. But then again, I don't walk backwards for my own amusement either.

If you think that it's shifting important organs from rear to front when he is waling down the stairs just remember that when he is walking up it's going front front to rear, so it all equal outs and you don't have to teach him to walk backward down the stairs.

I've seen them do it. Especially when trying to untangle their leash, they back up.
Usually when they walk backward they do it in a circle not a straight line, but they do back up.
