** For the Filling **
1 pound chopped beef
1/2 a small onion, minced
2 ounces prosciutto, minced
3 tablespoons butter

3/4 pound plum tomatoes, blanched, peeled, seeded and chopped
1/2 cup day old bread, stripped of crust and crumbled
1 cup freshly grated Parmigiano
Milk
A pinch freshly grated nutmeg
** For the Béchamel Sauce **
2 cups whole milk
1/2 cup flour
1/4 cup butter
Salt & Pepper
More grated cheese and butter for browning

Ingredients:
2tbsp olive oil
1onion, chopped
1 1/2 cups ground beef
1/2 cup ham , finely chopped
1tsp parsley
2tbsp tomatoe puree, mixed with 1tbsp water
1 egg
salt & pepper to taste
pasta sheets or cannelloni shells
cooked slightly
3 2/3 cups bechamel sauce
1/2 cup parmesan cheese
3tbsp butter
Directions:
Cook the ground beef with the onions until onions are translucent.
Remove from heat and add the ham and parsley. Add the egg and tomato puree, mix well.Season with salt and pepper. Set aside.
Butter a shallow baking dish and smear bottom with 3 tbsp bechamel sauce.
Stir about 1/3 of the sauce into the meat mixture.
Spread a thin layer of filling onto the pasta sheets and roll starting at the long end. If using cannelloni shells stuff them with the meat filling.Place the cannelloni in a single layer in the dish.Spoon the remaining sauce over top and bake at 425F for 20 minutes or until top has browned.

Anyway, for cannelloni filling you can really try any minced meat you prefer. I like chicken or pork mince.
Lightly saute mince with onion & garlic add herbs like basil and/or oregano ~ put aside.
Make a cheese sauce, mix with the mince. Fill the cannaloni. Line a tray with the filled pasta cover with a rich tomato (vegie not processed) sauce with basil and parsley.
Sprinkle parmesan and tasty cheese over the top and cook in med oven for about 30 minutes. Enjoy!!!!! :)

I use a mixture of ground turkey, ground sausage and ground sirloin, I mix 1/2 pound of each meat in a bowl add an egg some onion and brown it. After the meat is browned I add a small tub of blended ricotta cheese and 1/4 shredded mozzerella and stuff the cannelloni. Pour my sauce over the top and a bit more mozzerella. Cook till it bubbles! Hope you enjoy!

canelloni filling: saute ground beef with ground sausage (either hot or sweet, of combo), garlic, onions. Turn heat down, add parsley....season with s&p....once cooled, add to ricotta cheese with marscarpone cheese...toss and add parmesan cheese and a little sauce (tomato. if you are using a cream based sauce, add a bit of melted butter to this mixture and omit the sauce to the cheese, etc...) Spinach is a great, colorful addition (organic baby spinach is the best)
