...today? H1b applicants can only start working on Oct 1, 2007 if they get certified. But if you try to get the foreign labor certification online it won't allow you to enter Oct 1 because it is later than 6 months from today. How crucial is it to enter the exact start date for an H1b employee??

It probably has to do with the Prevailing Wage. Prevailing Wages from the State Workforce Commission are usually only valid for six months after issued. If you use that Prevailing Wage for a date more than six months into the future, the PW may have gone up already and you may not be in compliance because you'll be paying under the minimum requirements.
