What is your favorite recipe to use up leftover mashed potatoes?

I love to mix leftover mashed with Cajun seasoning, canned crab meat, a bit of cream cheese, cheddar cheese, eggs and a dash of baking powder then bake in ramekins - they puff up and get all golden and yummy like little souffles

MASHED POTATO PATTIES

This is a great way to use up those leftover potatoes.
Take your leftover mashed potatoes and add 1 egg and a little bit of milk. Add some onion, grated cheese and even a little bit of chopped green pepper if you like. Mix together.

Form into patties and roll in crushed crackers or corn flake crumbs. Put on cookie sheet and bake in 350 degree oven until hot. Remove from oven and place on broiler rack for a few minutes to brown on the outside. Serve - makes a great side dish.



Mashed Potato Casserole

3 cups mashed potatoes
2 green onions, chopped
3 slices processed American cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Mix the mashed potatoes with the green onions and spoon into one 8x8 inch casserole dish.
Bake for 30 minutes. Spread slices of cheese over the top of the casserole for the last 5 minutes of baking.

Sweetie,my favorite is something that i was raised eating.Good old fashioned patatoe cakes.You will be making extra just for this once you taste it.Here is the recipe:

Leftover mashed patatoes(as much as you have)
2-3 tablespoons of flour
1 egg(egg replacer equivilant too)
Onion(grated with a box grater.Grate it over the bowl so that the juice from the onion goes into the cakes)
Salt and pepper

In a pan,preheat some vegetable oil.While that is heating,add the flour,egg(or egg replacer),and onion,salt and pepper to the patatoes.Stir until combined.Drop by spoon fulls into the oil,and cook until golden.Flip,and cook the other side until golden,and the cake will actually sit up.

Mix 2 cups (full) mashed spuds with the following:
You may omit any veggie that you do not like.
Dice the vegetables...
One quarter of a small red bell pepper,
One quarter of a small green bell pepper,
Yellow onion, diced, enough to get 1/4 cup.
1/4 teaspoon black or white pepper.
1/2 teaspoon garlic powder.
Blend together well.
Spread the mixture into a baking dish that has been sprayed with cooking spray, or lightly greased with cooking oil.
Preheat oven to 375. Bake for 20 minutes. Remove from oven and sprinkle with your favorite grated cheese, at least half a cup. Allow to sit for a few minutes to let the cheese start to melt. Cheddar or a good yellow cheese is best. Great for a brunch with eggs and breakfast meats. You can have these without the cheese or you can use lowfat cheeses. Enjoy.

Other than the obvious potato pancakes and addition to bread dough, I have a couple for you.

2ND Time Around Mashed Potatoes

4 cups leftover mashed potatoes
6 chopped green onions
1 teaspoon onion powder (optional)
1/4 teaspoon ground black pepper
1/2 cup sour cream
4 slices bacon, fried until crisp and crumbled
1/2 cup grated old cheddar cheese

Preheat the oven to 350F.
Mix the potatoes, green onions, onion powder, black pepper and sour cream.
Spread mixture evenly in a greased baking dish and sprinkle with bacon and grated cheese.
Bake approximately 20 minutes until mixture is hot and cheese melted.
If you like a little zip in your food add 1T prepared horseradish.

Lefse (from my Norweigen in-laws)

2 cups of plain mashed potatoes
2 tablespoons milk
1 tablespoon butter
1/4 teaspoon salt
flour
vegetable oil
In a large mixing bowl mix potatoes, milk, butter, salt and 3/4 cup of flour.
Kneed briefly on lightly floured board, adding flour to make the
dough non-sticky.
Divide dough into 12 equal balls; roll each on lightly floured
board into a circle paper thin.
Lightly oil a heavy skillet or crepe pan; set over medium heat.
Cook one at a time, until lightly browned, about one minute on
each side.
Stack on a plate with a paper towel in between each one.
Freeze leftovers, and thaw throughout the year and enjoy a favorite anytime.
Serve with butter, butter & sugar or make your own topping.
This was used in place of bread in my husbands childhood home.

Croquettes

leftover mashed potatoes
shredded cheddar cheese
egg
bread crumbs
oil
I don't have exact measurements, but these are great! (you'll know when the consistancy is coprrect) Mix leftover mashed potatoes with some shredded cheddar cheese. Flatten into patties. Whisk egg briskly. Dip in egg and then in bread crumbs. Fry on both sides in oil until browned.

I usually make shepards pie with leftover mashed potatoes. All you need now is veggies gravy and cheese. Cook veggies and mix with gravy. Put in a baking dish and spread the top with the mashed potatoes. Cover the top with cheese and back until the cheese is melted. No one will know its left over.

Fish cakes!
1 can tuna fish
2 cups of left over potatoes
1 raw egg
1 scallion finely chopped
paprika, salt and pepper
canola oil for cooking

Drain the tuna, mix in the potatoes with a fork, add the egg mix well, add the chopped scallion, paprika, salt and pepper.
Wash hands thouroughly
Make into balls like you would hamburgurs
heat enough oil to cover the bottom of pan, fry the fishcakes
Delicious with chilly type ketshup and a salad.

Mix with the mashed potatos, 1 egg, feta cheese, sliced green onion, salt, pepper and garlic.

Make patties and dust with flour. Fry in a large saute pan in veg oil until browned on both sides. I swear you will love this recipe!!!!

Dice up some cold cooked chicken or meat, add an egg to bind, season form into croquettes.
Dip into an egg-wash and then bread crumbs and shallow fry in med hot oil until hot and golden brown on all sides

i just make potato pancakes and some onions and some seasonings that you like. Put a little oil in a frying pan and brown on each side.
