Do I cut it like a leek, where I use the bottom and thow out the long green part? or do I want to use the long green part?

Depends on what you want, you can cut the long green part in small pieces or long pieces, if you want a more oniony taste use the white part of the green onion, personally I prefer the green part, it has a delicious onion taste without being overwhelming. The lower (toward the white part) you go, the more onion taste you'll have.

Actually green onions are used just the opposite from leeks. You use the green parts and throw away most of the white part.

Green onions are not prepared like leeks.

The green onions are usually thinly sliced across into tiny rings, or julienned into thin strips.
Avoid overcooking them and you can use white and green on the green onions.

Leeks really are mostly used in soup, and have to be split in half and the fibers separated to rinse out the gritty sand.
Green onions do not have this problem. Just trim off the tiny roots, the dry ends, and rinse before cutting.

You use everything except the little roots at the very bottom of the white part. Dice the entire onion, white and green parts. Just trim the very top off if it's turning brown.

Sweetie,some are very funny about the part of the green onion they actually eat.I prefer to use the whole green onion.Why throw something away,it is good to eat,and has a "mild" onion flavor.The white part,has the stronger onion flavor,but all of it is wonderful.I would use it all!Make sure you wash them first tho!Good luck hun,and have a good night!!

You can use some of the green part for color. It's entirely safe to eat.

peel off the outer layer, and then u can cut it anyway u like, u can slice them, dice them, juiliane, batonet, mince them anyway, just be careful u dont cut yourself
