Buttermilk Candy
1 cup buttermilk
1/8 lb butter (1/2 stick)
2 cups sugar
1/2 teaspoon corn syrup
1 teaspoon baking soda
1 cup nuts
1/2 teaspoon vanilla
Put all ingredients except vanilla and nuts into pan and cook, stirring constantly until soft ball forms when dropped in cold water.
Add vanilla and nuts and beat till creamy.
When cool, cut into squares.
Also makes good frosting for spice cake

BLACK WALNUT BUTTERMILK CANDY
1 cup white sugar
1/8 tsp. salt
1/2 tsp. soda
1/2 cup buttermilk
1/2 tsp. maple flavoring
1 cup coarsely chopped black walnuts (you CANNOT substitute English walnuts)
3 Tblsp. butter
DIRECTIONS:
Combine the sugar, salt, soda, and buttermilk in a heavy pan. Cook to 235 degrees F. on a candy thermometer, stirring constantly. You will need a fairly heavy deep narrow pan as this mixture foams as you cook it.
Remove from the heat and stir in the maple flavoring, chopped walnuts and butter. Beat either by hand or with a mixer until thick and creamy. Drop by small teaspoonfuls onto waxed paper and let cool. Store in airtight container.

Buttermilk Candy

2 tablespoons while Karo syrup
1 cup buttermilk
1 teaspoon baking soda
½ stick butter
Put sugar, syrup, buttermilk, baking soda and butter in a large pan and stir constantly while cooking over medium heat. Cook until candy turns brown and a small amount dropped into cup of cold water forms a soft ball.
Cool and stir in a cup of chopped walnuts, if desired. Pour into a well-buttered pan or drop by spoonful onto waxed paper.

1 tsp. soda
1 1/2 c. buttermilk
1/4 c. butter
1 tsp. vanilla extract
1 c. pecans or walnuts
Combine sugar, soda, and buttermilk in a heavy 3 quart saucepan; place over medium heat. Cook, stirring constantly, just until mixture reaches the soft ball stage (234 degrees). Add butter and vanilla; beat until slightly thickened. Stir in pecans. Spread mixture in a buttered 9 inch square pan. Cool and cut into 1 1/2 inch squares. Yield: About 3 dozen squares.

Buttermilk Candy

1 tsp. vanilla
Pecan Halves
Mix sugar, buttermilk, butter, soda and corn syrup and cook over medium heat in a large pot until it comes to a soft ball state. Cool to lukewarm and beat until creamy. Add vanilla, pour into a buttered 8 x 8-inch pan and score in squares while warm. Top each square with a pecan half.

Combine sugar, buttermilk, soda and salt. Bring to a boil, stirring constantly. Cook about 7 minutes or to the soft ball stage. Add nuts and beat until candy thickens. Pour onto waxed paper. Yield: 2 pounds candy.
