It depends upon the type of potato you use. They can range from almost pure white to a creamy yellowish colour

They are all good, however some are better for roasting or baking. Others for mashing or chipping and others for salads.

It all has to do with texture
Read the label on the bag, it should tell you what type you are buying and how to use them.

It isn't mandatory however

It depends on the type of potato. The kind most people cook with are usually tend to be white or cream colored when you peel them.
But there are some potatoes that are red(the red-skinned potato) and purple (the purple Peruvian potato). There are even some potatoes that you would never know was a potato like the oca potato....anyway..yeah they are usually white or cream colored depending on what you're using

There are some potatoes that are yellow...the name doesn't come to mind, but it might eventually

they should be tan, or golden colored but depending on how yellow they were they should be ok. i've never peeled a red potato so im not sure what color they are when theyre peeled, but it shouldnt be too different than a normal potato.

The potatoe was fine to eat. Red pots are always yellow inside. The colour varies on what potato your using.

Depending on the variety, potatoes can be just about any color; some can have a sort of golden color to them, and I've even seen PURPLE ones.

"Weird... but TRUE"!!!
