At school we are having a salad and sandwich potluck. Any suggestions? Include recipies please!

Salad w/ pecans, pears, and blue cheese drizzled with a dijon vinaigrette. Super easy to put together and has a big "wow" factor when served. Buy a bag of romaine, a firm red pear, a container of blue cheese crumbles and some chopped pecans. Slice the pear into thin wedges, toss with the ingredients and add a dijon vinaigrette.

Recipes for dijon vinaigrettes are all over the place, I think you can even buy them but why bother?

This is a delicious salad called Fattoush

Ingredients

I head of romaine lettuce, 2 tomatoes, 1 carrot, 2 cucumbers, 6 radishes, 1 half bell pepper, 1 or 2 tablespoons mint, 1 quarter cup parsley, 2 lemons, 2 cloves garlic, 1 quarter cup olive oil, 1 tsp salt,1 large piece of pita bread


Chop all of the vegetables

crush the garlic, squeeze the lemons and mix these together with the olive oil and salt

Toast the pita bread in the oven. It should be golden brown - watch closely, it burns quickly. Break it up into small pieces.

Toss the salad and add the dressing. Add the bread when you are about to serve the salad.

If you have the spice sumac, it is delicious on top. You can find it at Arabic stores.

Pies or Savouries
Bacon and Egg Pie.
Line a greased greased baking dish with puff pastry.
Add cooled cooked diced bacon, mushrooms and onion.
Break in eggs.
Cover with another piece of pastry, prick a few vent holes, brush with milk.
Bake at 180% C for 20 minutes until golden.
Allow to rest and turn out. Cut into 3" squares or rectangles and serve.
Can be eaten hot or cold.

Savouries
Use a muffin pan and follow the same until you get too the eggs.
Mix gently with seasonings in a jug and pour over Bacon Mushroom and onions.
You can cover with pastry if you wish.
Mince, topped with mashed potatoes, or pastry is an alternative.

Adjust the quantity to suit.

Any left overs can be eaten by the cook. Reheat the mix add the eggs and cook

If everyone is taking a hearty dish maybe you should bring a few different types of homemade bite sized snacks. Maybe you can take a homemade dip and some crackers, a veggie tray, and a fruit tray. It is something that helps to unwind from the hearty food and or brings something simple to the potluck for the people who don't like some of the other things presented.

Layered Fruit Salad

2 C Fresh peach slices OR
16 Oz Can sliced peaches,
- drained
2 C Fresh blueberries
2 C Fresh strawberry slices
2 C Fresh green grapes
2 Tb Lemon juice
1 T Grated lemon rind
8 Oz Cream cheese -- softened
1 C Whipping cream
1/4 C Powdered sugar
1/2 C Walnuts -- chopped

In a large glass bowl layer fruit in order given. In a separate bowl
mix cream cheese, lemon juice and lemon rind. In another bowl whip
cream just until peaks form; add powdered sugar and whip to stiff
peaks. Fold cream cheese mixture and whipped cream mixture together.
Spread over fruit and sprinkle with walnuts. Serve immediately or
store, covered, in refrigerator.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:

Salad:

1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped

Vinaigrette:

1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin

Preparation:

Salad:

Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.

Vinaigrette:

Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Tortilla Rollups Tortillas, creamcheese mixed 50/50 with ranch dressing Chopped olives (Black) Chopped onion (Green) Good ham pieces (Cure 81) Spred cream cheese and ranch mix on torts sprinkle ham, onion, olive and oh yea shredded sharp cheddar cheese, Roll, cut ends (1 inch) off Cut in 1 to 1.5 inch portions. Keep chilled untill serving. The least time between making & serving is best. Mild salsa is nice allso.

Rainbow salad:

Boil one box of tri-color rotini, drain. Add enough Italian dressing to make it moist. Throw in chopped onion, sliced black olives, pepperoni slices or tortellinis, diced roma tomatoes or cherry tomato halves and some small broccoli and/or cauliflower florets.

Make the night before so flavors blend. Before serving stir in cubed mozzarella cheese, crumbled feta cheese, or shreds of asiago or parmesan.
Guaranteed hit every time!

meat balls in a crock pot , or warm prior and take in a baking dish warmer

1 bag frozen meatballs
1 jar apricot jam
1 jar salsa
mix and simmer 4-6 hrs in crock pot or 2 hrs on stove

You can't beat a jello mold. Make some jello {raspberry is my favorite} and mix in lots of fruit or tiny marshmallows or anything you like and watch it disappear.
