You should do whatever you feel is right in the situation. You know the bride and the families involved. Do you think anyone in the family or the bride would be offended by this??
Just remember that people are bringing presents to the shower, and if you expect them to bring food, you shouldn't expect them to bring presents as well.
The best way to alleviate the pressure from yourself is to have a potluck, but not with the guests, rather with the bridal party and close family of the bride. They won't mind helping with the shower AND pitching in with the food. This way it's easier on you (financially and physically) and the family helps out too.
Some people might be offended if they feel like they "have" to bring food AND a present.

The person who is planning the bridal shower is the one who provides the food and drinks. It`s kind of rude to throw a pot luck for a shower. The guests have to provide a gift, why food?

Please do not do a pot luck bridal shower. If the people in the group want to do all the food preparation, great, but please do not ask the guests to bring a dish. They are already bringing a gift for the bride.
It isn't appropriate and it is tacky. Would you want to go to a pot luck wedding?

yes its bad etiquette to ask the guest to bring something to the party unless they are the ones helping plan the party. this bridal shower is a gift to your friend, if you and the other ladies who are planning the party want to split the cooking duties fine but don't ask the other guest to bring food to me that's low class.

That sounds like a great idea to me. You could provide the disposable plates, cups and silverware and the beverages. That way the guest only have to bring their dish.

No, potluck is never appropriate. I also think it's tacky. If you are hosting people at a party, you should pay for all their food and drink.

I think that if you're all friends, it might be a fun way to get together and share recipes. If the guests don't know each other, though, it might be uncomfortable.

You and the other planners should provide all the food.
