it depends on how big or small you've cut the pieces of potato and what you're making with the potatoes. when i make mashed potatoes, i like to cut the pieces pretty small and boil them for about 10-15 minutes just so they mash up easier.
in general, poke them with a fork. if they stick to the fork, they're not done. if they drop off the fork or go straight thru then you're good to go.

Peel the potatoe and cut it up into small pieces. Boil till tender, about 20 mins.

if you are making mash potatoes cut them in half and when the color is even trough out the cut it is done about 8 minutes if you drop them on all ready boilling water. you may add salt now since they absorb a lot when you cook with them.
