This recipe is amazing and while the rotel gives a good flavor, it doesn't come across as overly hot.

time to make 30 min 10 min prep
1 cup uncooked long grain rice
1 sweet onion, chopped
10 cloves garlic, peeled and sliced
2 tablespoons olive oil
1 (10 ounce) can Rotel tomatoes & chilies
1 (14 1/2 ounce) can chicken broth or vegetable broth
1/2 teaspoon saffron threads
1/4 cup sliced black olives (may use sliced stuffed green olives as well)
1/4 cup frozen peas, thawed
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1. Heat olive oil in a saucepan and add chopped onion and sliced garlic.
2. Cook until tender and lightly browned.
3. Add remaining ingredients, stirring well.
4. Bring mixture to a boil, then cover and simmer over low heat for 20 minutes or until all the liquid has been absorbed.
5. Remove from heat, and place a thick towel between the pan lid and pan.
6. Allow to sit undisturbed for 5-10 minutes.
7. Fluff with a fork and serve.

I have close Spanish ancestors and I use to cook Spanish style and let me tell you that every region of Spain has several styles of cooking rice and also different types of rice. Some dishes are very rich including meats, seafood, vegetables; some only seafood, some simple meat, some only vegetables, some are baked and have an egg crust, others include Saffron, etc... the rice you are talking about must be suited for the taste of the US, but Spanish food, same as Mexican and Italian among others is very rich and diverse. I can give recipes but you have to be mire specific.

You can cook the rice using the juice from a can of stewed tomatoes When it's cooked add the tomatoes, beef (optional) green peppers, tomato sauce some beef boullion and a splash of burgundy or red wine.

I don't know how to make it from scratch, so what I do is get a box of Rice-A-Roni (the spanish rice kind) and it tastes pretty good and easy to make.

AND YOU CAN JUST DICE UP LITTLE GREEN PEPPER AND ADD IT TO THE RICE..YUMMY.BROWN THE RICE WITH ONION ADD TOMATO SAUCE STIR AND ADD BROTH, MAKE SURE BROTH IS HEATED UP FIRST. BOIL ON HIGH FOR ABOUT 15 MIN, THEN LOWER HEAT AND COVER.SIMMER UNTIL LIQUID HAS EVAPORATED.
