What I find most appealing about cous cous, the reason it has been a staple of my diet for several years now, is its versatility. Once you have the basic recipe down, the things which cous cous will do are limited only by your imagination (provided your imagination stretches no further than variants of the pilaf/pilau idea).

it will happily take flavourings based on the traditions of Mexico, Italy, India, even North Africa. All these variants can be achieved by changing the stock, the spices, the herbs, the contents of the initial frying, and so on.

Easiest thing to do with couscous is tabbouli salad:

Dice tomatoes.
Throw some parsley in a food processor and chop it to smithereens. Add mint if you like
Mix tomatoes, parsley, and lime juice.
Add in the couscous and stir.
Let it sit for a while.

Serve with pita wedges and some hummus.

I love this stuff.

You may want to add some chopped olives or capers if you like it more savory. Maybe some sun-dried tomatoes.

The trick is to not be too conservative with your choices, just don't make too many additions in one single shot or it will taste really really weird.

After the couscous is cooked, put it in the fridge to cool.

Once cooled, add mandarin orange slices, thin sliced green onion, finely chopped garlic and rough chopped cashews.

Using the juice from the mandarin oranges, make a vinaigrette with rice wine vinegar, peanut oil, garlic and ginger. A splash of sesame oil too, if you like the flavor.

Dress couscous mixture with vinaigrette and serve a refreshing, easy salad.

Instead of water, cook it in chicken broth. Add a stick of butter instead of oil.
