You can use minced and dried onions in place of regular onions. You simply mix them in and they will rehydrate as it cooks. You won't need as much because the onions shrink when they dry, so put about 1/2 the amount that the what the recipe calls for. My mom always cooked with dried onions, becuase she had similar tastes as your boyfriend, and now I use them in my own cooking.
You may have to experiment a bit, but you can pretty much use dried onions in anything you would cook or saute with fresh onions. The only trick is getting the proportion down. Fortunately, the dried onions are weaker in flavor than fresh onions, so you will probably end up on the side of less oniony than too oniony.

This is actually a very good substitute in something like a meatloaf. It will add nice flavor and your boyfriend won't notice the texture (a trick that works well with little ones too)
There are also bottled onion flakes, powder and in some recipes use a scoop of french onion dip for extra flavor.

Minced onions are dehydrated onions. Soak them in a little water before using them. You might also experiment with onion salt. Here's an alternative for your meatloaf:
2 lbs ground beef
2 T dehydrated onions, soaked in 2 tsp water
1 pkg Herb and Garlic dry soup mix
2 eggs
1 T Worcestershire Sauce
1/2 tsp fresh ground pepper
1/2 tsp salt
1 15 oz can diced tomatoes
1 tsp yellow mustard
2 T brown sugar
1/2 - 3/4 cup Italian bread crumbs
1/4 cup parmesan cheese
Mix beef with soup mix, onions,salt, pepper, eggs, and worcestershire. Set aside. In small sauce pan place diced tomatoes, mustard, and brown sugar. Simmer until slightly reduced. Add half of this mixture to the beef mixture. Mix in bread crumbs and parmesan cheese. Form into a loaf and top with tomato mixture. Bake at 350 degrees, covered, for 45 minutes. Remove cover and bake an additional 15 minutes.

Yes, you can use minced onions. Even better you can buy dried onion flakes. They can be ground up in a food mill and used in the meatloaf recipe. You will actually get more flavor in your meatloaf without the actual onion showing. Bon appetit.

I use that or onion soup mix as a kid i dint like big hunks of onion,, soo as a got older i hated them still so adapted flavor. now i love that fresh onion tatse i learned how to cut up onios fine lol.
Same with garlic sometimes when i cooked for my clients for home health you have to improvize so do it at home

Yeah, you can use dehydrated onion in meatloaf. My dad doesn't usually like raw onion smell, but loves it cooked, so he sometimes uses the dehydrated stuff. What does your boyfriend think of onion powder? You might try adding that as well.
