Some kind of roast, ey? Well, potatoes go well with pork or beef roasts and you can have them in a variety of ways. Here are a few of my favorites:

1. Mashed potatoes with sour cream, garlic, and cream cheese.
2. Scalloped potatoes with cheese on top
3. Roasted potatoes with olive oil and fresh rosemary (cut potatoes into cubes, toss with olive oil, kosher salt, fresh pepper, and place in roasting pan with fresh rosemary. Bake at 350 degrees. Turn them over after 30 minutes to crisp and cook on both sides. )
4. Potatoes cooked along side your roast (along with onion, carrots, and parsnips!)
5. Baked potatoes with sour cream, butter, chives
6. Twice baked potatoes with cheddar cheese, butter, and sour cream.

The list goes on!

Set oven to 400o F.
Quarter your potatoes into 1/4-inch portions and coat with extra virgin olive oil. Place onto a bake sheet and bake for 35 minutes or until golden brown. Sprinkle some white pepper and paprika on the potatoes and garnish with chives or parsley. Serve and enjoy.

Mashed potatoes are best with pork roast, baked are okay but with pork roast they seem kind of dry.

Garlic Mashed Potatos

when you are boiling the potatos cut up 1-2 cloves of garlic and boil with the potatos. Mash with lots of butter, milk, salt and pepper.

Definitely not healthy, but oh so good.

Remove the skin from the potatoes and boil. Once you can stick a fork in them and they fall off, remove from heat and drain.

In a warmed bowl, mix in 1/2 stick butter, 1 TBS of powdered garlic, 1/4 cup of warmed milk and sprinkle in chives.

Mix until desired consistency.
