i want to make a salsa but im not much of a "chuncky" salsa eater
i like salsa very very finely cut
i like hot salsa but not really really hot
so can i get a recipe and steps to make it please

This is a good salsa recipe for my subscription magazine that i've been using for a while

for about 1c. salsa, cut up

4 medium plum tomatoes (i take the seeds out of mine's)
1/4c. onion
1/2 jalapeno pepper. (you said you don't like it too spicy, so you can adjust the amount of this you use. AND USE GLOVES!! the chemicals that make it hot can stick to your fingers all day if you don't)
1/4c. cilantro
1/4c lime juice
1/3c. olive oil


add salt and pepper as you see fit. this keeps well for about 2 days in the fridge.

I too like a good finely chopped salsa. My dad has a great one, he also makes it "raw", meaning he doesn't cook it. It's sort of like pico de gallo when it's raw.
If I'm not mistaken he chops his veggies, tomatoes, white onion, and jalepeno's as small as he wants them, adds a little salt for flavor and sometimes chops up a little cilantro (a little goes a LONG way). He then prepares his jars for canning (they must be extremely clean, including the seals and the lids). He uses 1/2 pint jars and scoops in enough of the raw salsa to where there's between 1/3 and a 1/2 inch of space from the top, seals the tops and puts them in the canner to cook and seal. The water from the tomatoes is all that's needed. As always please be careful when canning.
It takes a few jars to get the hang of it, and get your recipe to suit your taste, but it's very easy. I would start out with a low heat jalepeno to start out with. Taste it before you put it in jars and you can always add more at that time. Oh, and always take the seeds out of everything, as it improves the appearance and lowers the heat.

if you like it smoother use canned chopped tomatoes - drain the liquid and pulse lightly to desired consistency in a blender or food processor.

Season with salt, pepper and use bottled salsa Verde to the point of heat you like it. Add chili powder, garlic powder, and minced onion to taste.

If you like a sweeter salsa mix in a bit of mango from the jar or canned pineapple when you pulse the tomatoes. Cilantro fans can add chopped cilantro at the same point. Lime juice/zest is also a good addition.

You can experiment with different types of canned chilies or hot sauces instead of the salsa Verde if you have a favorite brand.

When lots of fresh fruit and veggies are available you can also experiment with different types of fruit, fire roasted peppers, grilled onions - skies the limit.

Perfectly smooth salsa:

8 Roma tomatoes (cut in half, seeds removed)
1/2 onion chopped
1-3 jalapenos or serranos
Juice of 1 lime
handful of cilantro leaves (fresh)
3 cloves garlic
1 tsp vinegar
1 tsp salt

Combine in blender, puree and chill for an hour to allow the flavors to blend together.

This salsa is excellent for chips, migas, breakfast tacos, and all Mexican foods!

Side note: Add this salsa to avocados and mash together with 2 tbs sour cream for instant fabulous guacamole!

the blender works great for finely cut salsa.

1/2 white onion
1/2 jalapeno
2 large tomatoes
3 tbsp cilantro
salt and pepper
I use a tablespoon keylime juice

serono peppers
sweet onions
roma tomatoes
celantro ( right by the parsley in produce)

add the bunch of celantro
and approx 4 peppers
3- 4 medium onions
4-5 tomatoes add these last
use ethier a food processor or a blender
and mix till the consistancy you like
add salt and /or lemon to taste

TAKE2 CHOPPED ONION.............6JALAPENOS.........CILANTRO CHOPPED.....3TOMATOS CHOPPED....BUT IN.BLENDERAND ADD JUST A LITTLE WATER...........TAKE 1 LEMON SQUEEZE,AND 1/4 CUP OF OLIVE OIL, SALT AND PEPPER .DONE YOU CAN EAT WITH ANYTHING AND NOT CHUNCKY
