Mahi mahi is definetly the best fish to catch because they put up the perfect fight. It isn't so tough that you can't reel it in but it's not a piece of cake either. The best part is when theyget close to the boat, because then they really struggle. Their delicious too.

If you are talking about the fish that gives the best fight and aerial show I would have to say the skip jack along the Texas Coast is fun to catch and watch jump. I have hooked into a couple of Tarpon and had the fight of my life until the line broke or the hook pulled.

Spotted/speckled trout are always fun when they put up a hard fight on light tackle. Red drum can really wear you down on light tackle as well.

Since my tackle is usually running 10lb test line for my boat rods for inshore fishing and 20lb test for my surf rods I would be biased when I say any fish that bites my bait.

When using surf rods I am using live mullet and cut mullet for bait. On my other rods I am using shrimp (live and dead) top water lures, soft plastics and the occasional squid. I am primarily throwing lures as I like to sight fish.

Gotta say red drum, hands down. 8lb test line or less. Live finger mullet for bait. But the bait will vary depending on were you`re at. You`ll find em mostly in mouths of tidal creeks around oyster bars.
The fish I hate are the "spoolers"!!!! The ones ya never see and can only speculate on what it was. Then when ya tell the tale later, no one believes ya.

Funnest fish to catch....tarpon, most definitely.
I caught my first one last year out of a kayak, around 100lbs. Luckily he towed me to the beach instead of heading offshore. My buddy grabbed my kayak and I jumped out and fought it for the next few minutes from the beach. Nothing better than feeling water hit your face while the six foot tarpon jumps 15ft away from you. You can't beat a crab or shrimp for bait. Can't wait to do it again. My dad fought one for over an hour, it towed us 2.5 miles down the beach weaving around other kayakers and boats. That fish was huge, estimating it around 150lbs+. It eventually broke the leader and I had to paddle all the way back, his arms were like jello...very funny.

If you ever have a need to feel this rush, find a way to catch one of these suckers.

Wahoo, when taken on a casting jig. (Some people get them trolling on heavy tuna or marlin tackle, which takes the fight out of them.) Hook a 40-pounder on 30 pound line and you'll learn why the reels hold 300 yards of line, then after a good run or two they come in without too much trouble. (That is, a 40 pound tuna won't run as fast or as far, but it'll take longer to get to the boat.)

Sounds weird, but the most fun I had saltwater fishing was catching stingrays. They fight like a son-of-a... caught them on live shrimp bigger than I have ever ate myself!

I think Australian salmon Pilchards or silver lures are best baits (shore fishing)

Snapper live squid as best bait (boat fishing)

the best bait varies....

Try live shrimp, dead shrimp, peice of squid......you're bound to catch something...
