BAKED HADDOCK
1 1/2 lbs. haddock, cut into 4 pieces
1 sleeve Ritz crackers
1/2 c. oil
1/2 c. butter
1/4 tsp. garlic powder
1/4 c. Parmesan cheese
Place haddock in greased pan. Melt butter and mix with oil. Add crumbs and mix well. Add cheese and garlic. Spoon over fish. Bake at 350 degrees for 25 to 30 minutes.

Mock Lobster Casserole
2 lbs. fillet of Haddock or Pollock
1 can frozen shrimp soup*
1 tbsp. sherry or lemon juice
1/4 c. melted butter or margarine
1/2 tbsp. minced onion
1/2 tsp. crushed garlic or 1/8 tsp.
garlic powder
1/2 tsp. Worcestershire sauce
About 30 Ritz crackers, crushed
*Or use canned cream of shrimp soup. Place fillets in baking dish. Sprinkle with salt. Pour cream of shrimp soup over. Add sherry or lemon juice. Bake, uncovered for 20 minutes at 375 degrees. While fish is baking, stir onion, garlic, and Worcestershire sauce into melted butter. Then blend with cracker crumbs. Sprinkle crumb mixture over the fish and bake 10 minutes more, or until brown. Serves 6.
MICROWAVE FISH DISHRITZY FISH
1 "sleeve" Hi-Ho or Townhouse or Ritz
crackers
1 stick butter or margarine
1 1/2 c. Cheez-its (2 handfuls)
1 1/2- 2 lbs. fish fillet (scrod,
haddock, etc.)
1 pkg. sliced Mozzarella cheese
(about 6 oz.)
Melt butter or margarine; set aside. In medium size bowl, put crackers and Cheez-its, crush with fist into crumbs. Add melted butter; mix together. Place fish in greased baking dish, skin side down. (To prevent overcooking thin "ends" fold them under.) Put half of crumb mixture on top of fish. Microwave 5 minutes. Remove from oven, place slices of Mozzarella cheese on top. Cover with remainder of crumbs. Microwave 5 minutes more (High). Serve. (Fish will flake when done.) 15 minutes preparation and cooking time. Fish, about 5 minutes per pound.

1 tbsp. vinegar
1/3 c. chopped parsley
1/2 c. Ritz cracker crumbs
Paprika
Arrange fish with thickest part to the outer edge of dish. Sprinkle lemon pepper over fish; set aside. Place butter in 2 cup glass measure and microwave 1 minute on High or until melted. Add lemon juice, vinegar and parsley to butter and pour over fish. Combine cracker crumbs and paprika, sprinkle over fish. Microwave about 6 minutes on High or until fish flakes.
