For the outside of the chicken, sprinkle with pepper and garlic salt (or salt and a very little garlic powder--1/2 tsp--if you don't have garlic salt)
For the inside filling/stuffing of three chicken breasts:
6 crushed cloves of garlic (or 6 teaspoons already minced garlic)
3 tsp butter or olive oil
1 tsp rosemary
1/2 tsp sage
1 can cream of chicken soup (Campbells is always a good choice)
Mix it all up together and stuff chicken breast with it. If you don't like cream of chicken, ricotta cheese also works (and is a bit thicker). You could also use a can of tomato sauce instead of cream of chicken, and add 2 tsp each of oregano and basil. This can also be used if you just want to put the chicken in a pan and cover it with these ingredients, and then cover the pan with a lid or tin foil; bake in the oven at 375F for 35 minutes or so.

Or if you just want something extremely simple, just use salad dressing (vinagrettes are best) as a baste/marinade when you grill.

The most important thing is to always pepper and garlic salt the chicken before you do anything else to them. And these all work for pork, too.

One of our favorites for simple grilled boneless skinless chicken breasts is to marinate them in Italian dressing for 30 minutes before grilling.

To calculate the grilling time we use the cookout calculator at charocoalbob.com. Just enter the thickness of the various chicken breasts you will be grilling and it will give you printable instructions for when to put on and turn them so that they all come off the grill at the same time.

After grilling we like to let them rest for about 5 minutes before cutting to keep them nice and juicy.

INGREDIENTS
6 medium chicken breast halves
1/4 cup honey mustard
2 tablespoons low-fat mayonnaise or salad dressing
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon dried oregano, crushed
1 teaspoon dried basil, crushed
1 teaspoon dried rosemary, crushed
1 cup finely shredded reduced-fat mozzarella cheese
1 cup chopped fresh spinach
1/2 cup finely chopped red sweet pepper
1/4 teaspoon black pepper
3 garlic cloves, minced
Grilled asparagus (optional)
Roma tomatoes, cut up (optional)
DIRECTIONS
Make a horizontal pocket in each chicken breast half by cutting from one side almost to, but not through, the other side. Place chicken in a self-sealing plastic bag set in a shallow dish. For marinade, in a small bowl combine mustard, mayonnaise, oil, vinegar, oregano, basil, and rosemary. Pour over chicken; seal bag. Marinate in the refrigerator for 2 to 4 hours, turning bag occasionally.
Meanwhile, for stuffing, in a medium bowl combine mozzarella cheese, spinach, sweet pepper, black pepper, and garlic. Spoon stuffing into pockets in chicken breast halves. If necessary, fasten pockets with wooden toothpicks.
For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place chicken breasts, bone sides down, on grill rack over drip pan. Cover; grill for 45 to 55 minutes or until chicken is no longer pink (170 degrees F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.) If desired, serve with asparagus and tomatoes.

try one of the McCormick "Marinade in Minutes" products. they usually only need to sit for 15 to 30 minutes.

also, salt, pepper, poultry seasoning on bone-in, skin-on chicken breasts is always tasty. grill until done.

there are spice medleys in the spices aisle in your grocery store, pretty goos stuff. You could also try sprinkinh garlic salt, and one of my faves, sprinkle lime juice while grilling, and finish withn crushed pepper, yum! You can add peas & carrots or mashed potatoes as well as a salad for side dishes, enjoy!

(try salads in a bag for a fast fix!)

lightly brown chicken breast just for a little color, slice a pocket into chicken, stuff with feta cheese, spinich & mushrooms ( or other veggies and cheese of your pref)
could do cheddar and broccoli. put back in pan on low, cover with cream of chicken soup of your choice (or mushroom or cheddar & broccoli) and let simmer. serve with noodles/rice and a salad. I ususally go home at lunch and do something similar in my crock pot. Good luck !!!
