I know you can do beef and pork, but is chicken okay?

duh? of course it is ok! i do it all the time. make sure your seasonings are in the pot and a half pot of water. check it from time to time and make sure that there is liquid in the pot. However chicken does make it's own liquid. you will be fine.

No probem. Extend the cooking time some. Do not put unpeeled root vegetables in a pot that will not reach cooking temperature for a long time. They can have spores on them from the ground that can live during the heating up time.

You could put anything in a crockpot & it would come out great.
