Chicken Salad? Boil Chicken, shred once cooked. Add, pineapple tidbits, chopped walnuts, onion, celery, and dried cranberries. You can freeze it for up to 6 months without losing any flavor!

Or Chili? That can be frozen forever....

Sausage and Peppers freezes well. Just take some Italian sausage you can get both hot and sweet or just one and you can either grill it or cook it on the stove top (cook it whole), then take the peppers and onions and cook in a frying pan with a bit of olive oil, cook them so they are a little soft but not mushy. Once the sausage has cooked you can slice it in rounds or on a bias mix with the peppers and onions. Wait for it to cool and freeze.

Eggplant Parmigana freezes really well also. Just take a few eggplants and peel them cut them in rounds or lengthwise, place in a colander and put a heavy pot on top of them so the excess water drains out (for about an hour). In the meantime prepare your favorite marinara or tomato sauce and shred some mozzarella cheese. Once the eggplant has been drained dredge it in eggs and flour and fry until golden do not over fry. Then take a lasagna ban or any square baking dish and put down a layer of sauce, then eggplant, then sauce and another layer of eggplant. Continue until you have used all the eggplant. Once you have put in your final layer of eggplant add a scoop of sauce and cover the top with the shreded mozzarella. Bake in the oven, let cool and freeze.

I use a couple cans of Dinty Moore beef stew and several cans of favorite veggies and cook a big batch. Divide into meal size containers and freeze. Thaw and cook in microwave. I have used them up to two months later with no problems.

Lasagna would be good. It's easy to make, freezes beautifully and most people like it. There are tons of recipes online-just go to cooking.com & I'm sure you'll find a good one.
