My guess would be that it builds up because you use it so often, and so skipping a day will make your hair still be greasy. My recommendation would be to use a clarifying shampoo once a week to strip off all the gunk you put into it during the rest of the week. I get this same problem with leave-in conditioners building up.

a good clarifying shampoo will help with remove dirt and build up of products in your hair. Also when you rinse out conditioner in ur hair, make sure you rinse it all out. I know when i had my long hair it used to be like that because i wouldnt rinse out my conditioner all out. As well, keep in mind not to use a lot of spray, you only need a little.

Hmm mine gets like that also, I use daily clarifying shampoo by tresseme. it helps!
