I advice you two simply and tasty recipes of my country:
PASTA CACIO E PEPE
Ingredients: Pasta , 2 1/2 Tbsp Pecorino Romano per person, 1/2 tsp black pepper per person, water.
Cook pasta "a dente". Grate Pecorino Romano and add black pepper. When pasta is cooked, drain it and save some of the water used to cook it. You can now sprinkle pasta with Pecorino and pepper, and at the same time you have to add some water (fro pasta) to make Pecorino melt and form a nice and creamy sauce.
PENNE ALL’ARRABBIATA
Ingredients ( Serves 2 )
Penne Pasta - 1/2 pound Ripe Roma Tomatoes - 1 cup, finely chopped ( Or 10 oz crushed tomatoes - canned ) Tomato paste - 1 tbsp Garlic - 2 cloves, medium size, finely chopped Red chilli flakes - 1/2 to 1 tsp Dried Oregano - 1/2 tsp Fresh Parsley - 1 tbsp, finely chopped Olive Oil - 2 tbsp Salt to taste Freshly grated parmesan cheese Method
In a large pot of boiling salted water, cook pasta al dente according to package instructions.
Meanwhile, heat oil in a deep skillet or pot. Add chopped garlic and saute` until fragrant.
Next add red chilli flakes, dried oregano and chilli flakes, saute` for 5 to 10 seconds and then add crushed/chopped tomatoes, tomato paste, salt to taste and mix well.
Simmer over low-medium heat for about 5 to 8 minutes or until the tomato sauce has reduced a little bit.
Add cooked pasta, chopped parsley and toss until mixed well.
Serve hot with freshly grated parmesan cheese.

Chicken Alfredo
INGREDIENTS
6 ounces dry fettuccine pasta
1 (8 ounce) package cream cheese
6 tablespoons butter
1/2 cup milk
1/2 teaspoon garlic powder
salt and pepper to taste
2 skinless, boneless chicken breast halves - cooked and cubed
2 cups chopped fresh broccoli
2 small zucchini, julienned
1/2 cup chopped red bell pepper
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
While pasta is cooking, melt cream cheese and butter in a skillet over low heat. Stir until smooth. Stir in milk, and season with garlic powder, salt, and pepper. Simmer for 3 minutes, or until thickened, stirring constantly.
Mix in chicken, broccoli, zucchini, and red pepper. Cook 3 minutes over medium heat, then reduce heat, and simmer 5 minutes, or until vegetables are tender. Serve over fettuccine.
You didn't say how old the child is, but for the veggies & stuff they will not or can not eat, just leave out. the noodles with alfredo sauce is a nice change from the mac n cheese. hope you enjoy!

Creamy Cajun Chicken Pasta
recipe.
2 servings 25 min 10 min prep
2 boneless skinless chicken breasts, cut into thin strips
4 ounces linguine, cooked al dente
2 teaspoons cajun seasoning
2 tablespoons butter
1 thinly sliced green onion
1-2 cup heavy whipping cream
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/4 cup grated parmesan cheese
Place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.
Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.
Pour over hot linguine and toss,with Parmesan cheese.

Garlic Pasta... take about 8 cloves fresh garlic chop finely, or use garlic press , then about 1/4 cup white wine , a stick of butter and 1 Roma tomato chopped small , take the butter and wine melt in sauce pan add the tomatoes and garlic and simmer for about 5 minutes add to pasta and toss with Parmesan that's it. Its very simple and if you like you can add shrimp to this and cook shrimp in sauce til they turn pink usually about 2 minutes it takes about 10 minutes to prepare and it is delicious...

I have a one year old and she loves this:
Brown ground beef or ground turkey and drain. Add two cans of cambels tomatoe soup, one can of corn drained (or use frozen corn) one can of red kidney beans drained and cook for five or ten minutes then add boiled large elbow macaroni noodles (boil while your browning your meat) It's really fast and kids love it...especially with the corn and beans..I always make extra and freeze some in little jars for her to eat when she can't eat what we are eating. The entire family can enjoy this. (it's called goulash)

I must agree with chesney. I didn't know what it was called before, but goulash really worked for my little cousin and it's really good and fast to make.

my son like to cook either spaghetti noodles or wide egg noodles. add butter, lemon juice parsley and parmesan. you can also add shrimp if you like.
