The premixed seasoning has some "extra" ingredients in them that are not healthy. I want to make my own. What has worked for you?

I have tried many but this is the BEST. Can also be bought in a jar in the seasoning aisle. I also like Tone's Cajun seasoning.

EMERIL'S ESSENCE CREOLE SEASONING

Ingredients needed:

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.

Yield: about 2/3 cup

Homemade Blackening Seasoning

4 tablespoons paprika
4 tablespoons salt
4 teaspoons garlic powder
4 teaspoons cayenne pepper
2 teaspoons dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
2 teaspoons dried chives
1 teaspoon white peppercorns, cracked
1 teaspoon black peppercorns, cracked
1 teaspoon green peppercorns, cracked
1 teaspoon red peppercorns, cracked

1. Combine the paprika, salt, garlic powder, cayenne, thyme, oregano and basil in a bowl.
2. Place the peppercorns and the chives in a spice grinder and blend until fine. Combine with blended seasonings.


I like to use this to make blackened scallops, which is a total foodgasm. (You have to use fresh, though. Any previously frozen scallops have so much water soaked into them that blackening just doesn't work, all the seasoning just sorta clumps off.) Just, as ya know, have a really good vent over your stove when blackening, or do it outside.

Haven't tried this on fish, but it does work great for the scallops.

Kelli (nice name..mine is Kelly...lol) anyway I don't like fish but on cooking shows - mix some course salt and a black pepper mixture together - then coat your fish with butter or whatever oil type ingredient (olive oil? butter?) and roll it in the blackened mixture. This gives it a salt and pepper taste. you can try one as a test first of course before you "ruin" it all.....good luck! Also I see some cooks place lemon slices inside the fish to add more flavor.

I like lemon pepper, season salt, regular pepper, garlic pepper (not salt), and cilantro.
