The decrease in pH tends to favor the enzymatic activity of lipase enzymes, as they are activated at lower pH levels. Thus, decreased pH level means more lipases activated, and greater enzymatic hydrolysis.

As you hydrolyse more fatty acids you are cleaving the fatty acids to glycerine and eq's of long chain (fatty acids - long chain - COOH).

This increase in acidity will rise to a decrease in overall pH.
