Good Friday is a day of fasting and abstinence for Catholics, out of respect for remembering the day Jesus was crucified and died for our sins.
The tradition of not eating meat (same as not eating meat on the Fridays of Lent) is meant to be a sacrifice. Some people trace it back to the Middle Ages when meat (well, the flesh of land animals and birds) was considered the food of the rich. Others say it was a conspiracy by the fishing industry to get more business. Still others talk of it being about not spilling blood.
To me, the important thing is to make the day about simplicity and prayer. I personally abstain from meat out of respect for the tradition, but I don't pretend that it somehow makes me a better Catholic.

Catholics do not eat meat on Friday because Jesus died on Good Friday and it is a way for Catholics to honor the sacrifice that Jesus made for us on that day. Abstaining from meat is a small way of uniting ourselves with the self-sacrifice of jesus.
Additionally, it helps us understand the plight of the poor. The rich can go to the market and buy meat, but the poor have to go to the river or lake to put protein on the table.

It is a form of sacrifice and penance for their sins and the sins of everyone in the world. If Jesus could give up his life for our sins, what is so hard about asking Catholics to give up meat for one day?
Actually Catholics are not supposed to eat meat on Ash Wednesday or any Friday during lent.

Jesus supposedly died on a Friday. Catholics used to refrain from eating meat every Friday not just Good Friday. You are allowed to eat fish.

As a former Catholic I know of no scriptural edict forbidding the eating of meat period. I do hear reports from time to time and the latest I heard was that the catholic church no longer prohibits eating meat on fridays.

It became traditional that Roman Catholics should not eat meat on any Friday or Ash Wednesday.
It's a form of penance supposed to help you focus on more important things such as God.

This isn't the case since Vatican II. It was originally a sacrafice to be made on all Fridays to correspond with Jesus' sacrafice on Good Friday. Now it's only Good Friday that this is observed.
