I strain mine through a cheesecloth and store it in an empty oil bottle. Either pour very, VERY carefully or buy a funnel. Keep the oil in the fridge.

Don't listen to smalltownchick. Oil CAN hold bacteria, but if it's used for cooking, the temperatures used will ALWAYS sterilize the oil. The thing you should worry about most is the oil going rancid. This happens when the oil starts to break down by free radicals and Oxygen attack... The same things that make us look old. :) And like us, the best way to combat it is to add some vitamins, spcifically antioxidant vitamins that are oil soluble.

Let the oil cool until it is just barely warm and still very liquid. Strain it like everyone else here suggests and put it into an airtight container such as a mason jar, etc. Next, add a few dropper full of vitamin E oil or just pop a couple of LARGE vitamin E capsules and squeeze the capsule full of oil into the used oil. Close it up, stir it real good and store in the fridge. The Vitamin E absorbs the free radicals which will make the oil go rancid. The next time you cook though, the vitamin E will be destroyed by the heat so don't think you are getting extra Vit E this way/. :)

I keep the original bottle that the oil came in and put a funnel in it with a coffee maker filter. And pour the oil through that back into the original oil bottle and then it's clean for the next time.
I have done this for years and never had a problem.

I use the jars that spaghetti sauce comes in & store them in the cabinet.
A stainer might be good, but the crumbs bits won't hurt.

If it were'nt very unhealthy, I'd strain mine in cheese cloth, but used oil holds many different kinds of bacteria.........millions, especially if you cook meat in it......
