How do you say "pocket change" in Spanish?

There are many ways, depending on the country. In Mexico they say CAMBIO (means change, but it refers to pocket change) Central America: we say "SENCILLO" (Means SImple or single, but referring to money it means pocket change) In Spain they say MENUDO or Monedas (Coins)
Menudo means Little pieces.

Dr NO is right. Here in Peru "Cambio" means only "change", as in the $3 you get back when you pay with a $10 bill for something that costs $7. For this "vuelto" is also used, as in "aquí está su vuelto", "here is your change". "Cambio" also means "change" as in a transformation, like a change from red to green, or a change of clothes, or a change of habit, etc.

Here, "sencillo" is also used to mean "pocket change" when referring to money and also means "simple" when used in the right context.

In Spain it is called "calderilla". In Argentina "cambio"
