i like my fish to have flavor

There is an Italian which translates roughly to "fish breathes in water therefore it must be drowned in wine". The following is a good way to cook any fish as all the flavor and moistness is retained. Rip a couple of squares of baking paper, put your fish in the center, either whole or filleted. Top with some fennel, a couple of lemon slices, a good splash of white wine and any other flavors you like. Wrap the parcel and bake on the oven @180 cel for about 20 mins (more or less depending on the size of the fish). Yum. I have also done this using tin-foil instead of paper and burying it in fire coals for about 10 minutes. It comes out superb!

On the Grill!

I know a grill is not always accessible, which is why i bought an indoor electric grill. I LOVE the thing. It's a very healthy way of cooking without oil and you maintain alot of the flavor.

For fish, keep it simple. and keep fresh lemons in the fridge. Using a paper towel, wipe the grill down with olive oil, cook at about 325, season with salt, pepper, garlic, and if you have it fresh or dried basil, squeeze half a lemon. Cook time depends on the size of the piece. Try to only flip it once, this keeps the moisture in. Then when done, use drizzle the other half of the lemon on top. Very easy, and usually delish!

We love to cook our fish in the oven @350 for 1 to 1.5 hours. Line 9x13 pan with foil. Place fish in and season with lemon pepper. Cut up one onion and green pepper into slices (your desired thickness) place over fish. Place a 3 to 4 spoonful of butter throughout the pan. And pour 1/4 cup lemon juice over the fish. Seal with foil and back until the fish is flaky. Serve with rice or pasta.

This is a recipe that I kind of happened on by accident.
Depending on the amount of fish, you may want to double my ingredients.

Blend 1 raw egg in a bowl with a pinch of salt, 1 tablespoon of milk, a little dark beer ( I would say just the amount that fills the neck of a beer bottle), and maybe just a pinch of minced garlic.

Dip your fish in that mix until it is good and covered. Then roll it in either flour or italian bread crumbs. Then you can either fry it, or my preference, grill it with a little lemon and oregano.

On top of stove in a frying pan, with some lemon butter. You could even garnish with just a pinch of paprika before you serve it.

Cover it in mustard....dredge it in Cornmeal and either deep fry it or oven fry it. Don't forget to add some spices to the corn meal.
