I may not have scientific facts or data but I am lucky enough to have been married twice. The first time it was the traditional 3 tiered spice cake that I went for. The bottom tier was eaten at the reception and I was left with two tiers that cost me a fortune and ended up giving one away and throwing the other one out. The second time I ordered a chocolate cake that cost a fraction of the price and of course more people enjoyed it even the children. And you could add cream or custard to the leftovers.

My mother works in a patisserie, they make cakes for all occasions, and she told me that the traditional wedding cake with Royal icing and marzipan is only about 30% now, sponges, pyramids of profiteroles, light fruit cakes even cheesecakes are more popular, with chocolate being way out in front, they do a four tier chocolate covered sponges, decorated with hand made chocolate roses in white and dark choc, prices start at 350 pounds.

If I was to get married I would have a chocolate cake and I would have a red dress instead of a white one. Tradition is overrated and more people like chocolate cake than fruit cake, especially children. Its naughtier.
I also read its good for couples on a budget because it can double as a dessert and therefore save money.
The cake I would have would be almost brownie like!

Chocolate fudge cake, mudcake, white mudcake, citrus cake, sponge cake, even baked cheesecake are the flavours of choice.

More often than not, the wedding cake is served as dessert and enjoyed by guests on the night of the celebration. And breaking with tradition further, many couples choose a dramatic collection of cupcakes or individual cakes, either served as dessert or given to guests as gifts.
