It depends on the cruise and on the specific ship.
Poker has of course become very popular in the past four years or so, and so many of the cruise lines are spreading a game, usually low limit rather than higher stakes or no limit.
As you can see from the link they certainly have some table games, and they do mention Texas Hold'em. So you might be lucky. You might want to give them a call and ask about the specific ship you are going on. The casino hotline is 1.877.752.9625.

I don't think that NCL has poker like Texas Hold'Em on board their ships (that might have changed since the last time I went cruising with them - 6 years ago). Back then they only had Carribean Stud Poker.
