YES you do need a seperate visa. you will need to get a chinese visa to enter mainland china. you can get it in hong kong, just be prepared to go early and to wait a long time for it. if you are a US citizen and you are not going to be in hong kong for long, you will not have to get a visa for hong kong, just for mainland china.

Canton is Guangzhou, which is in China, so you need a visa to enter China, whether you go there directly from the mainland, or through the Hong Kong SAR.

Yes you will need a seperate visa to enter Canton (which is now Guangzhou by the way). I have found it faster getting the visa in H.K. during my stay in the Hotel. If you pay a little extra you can get it back same day.
