There are *not* billions and billions of enzymes.
Enzymes are proteins. Proteins are encoded by individual genes. There are an estimated 20,000–25,000 human protein-coding genes.

Look up lactate dehydrogenase on wiki. It catalyses the interconversion of pyruvate and lactate with a concomitant interconversion of NADH and NAD+.
