Can somebody suggest me some easy to do Italian dishes. Was in Rome, Florence, Venice and Pisa recently. Fell in love with their food. I wish to learn more about Italian food, but unfortunately due to my study schedule, I may be a little short of time. Can somebody just suggest me some amazing Italian dishes? Perhaps with chicken, meat, with macaroni, anything!

all right!!!
from Toscany:
Zuppa di Natale (christmas soup)

1 cabbage
3 cans of spain beans the white and flat and big ones
2 onions yellow
1 celery heart (3 pices)
5 potatoes
salt pepper to taste
1 bottom of prosciutto
olive oil
2 clove of garlic
1 loaf of rustic bread sliced and toasted and rubbed with garlic


chopp the onions ,the celery ,add to a casserole with some oil,let them suet, add the potatoes in cubes,the cabbage chopped, the prosciutto,add some water (2 liter) let cook for about 45 minutes then add the beans salt pepper(i prefer bouillon) and on the stove for other 30 minutes. Put the slice of bread in a plates and pur the soup on top with some pices of the prosciutto. Drizzle some oil and enjoy!!!

This one we do it every week

Torta di zucchini

5 zucchini
5 eggs
1 onion
parmesan 1 cup
half cup bread crumb
salt pepper to taste

salte the zucchini with the onoin in a pan, when ready(golden)
put in a bowl add the eggs the parmesan salt pepper and transfer in a casserole already greased ,sprinkle some bread crumb on the bottom of the casserole and on the top of the zucchini.In the oven for 40 minutes at 350.


risotto con salsiccia

2 cups arborio rice
3 sausagge(italian possibly)
1 onoin
to sobstitute the leftover juice from a rosbeef you can use
1 package of au jus
1 teaspoon oregano
salt pepper to taste
chicken broth(can is ok)
1 tablespoon of butter(non sobstitute)
parmesan how much you like

chopp the onion put in a pan (large) with some oil,when soft add the sausage in small pices,the add the package of aujus,1 cup of broth,let cook for few minutes then drop in the rice, let it toasted for 2 minutes the oregano then add the broth time to time.When ready add the butter and the parmesan.

Most of what you mentioned is actually italian-american, we don't cook chicken with parmesan cheese and we don't dress anything with alfredo (which was actually invented by americans). A nice gravy for your pasta might be this one: throw some finely chopped onion in a pan with some olive oil. After a few minutes throw in some fresh sausage; when the meat is nearly done, add some chopped fresh mushrooms, porcini mushrooms if you can find them, they're a bit expensive but they make a difference between ordinary food and gourmet dishes. Add salt and a tiny bit of chilly powder. Drain your pasta and throw it in the pan with your gravy, mix it all together, sprinkle some grated parmesan cheese, serve.

Pasta Carbonara

Ingredients
1 pound pancetta diced
coarse salt
1 pound Linguini
3 eggs
1/3 cup Chopped Italian parsley
freshly-grated Parmesan cheese
freshly ground black pepper, to tast

Method
Sauté the pancetta in a small skillet until crisp. Remove with a slotted spoon and drain well on a paper towel. Boil the water and cook linguini until firm and tender. Meanwhile, beat the eggs thoroughly in a large bowl suitable for serving. Have the cooked bacon and the chopped parsley ready at hand.
When the pasta is done, drain it immediately in a colander, and pour into the bowl of eggs and immediately begin tossing it. As the strands of pasta become coated with the beaten eggs, their heat will cook the eggs. Sprinkle the bacon and parsley on, and serve immediately.

This is great with lots of freshly grated Parmesan cheese and freshly ground black pepper.

Pasta d'Alici (pasta with anchovies) is probably the easiest & yummiest meal ever.

Boil angel hair pasta according to package.
Heat 2 Tbsp. good quality olive oil in a non-stick pan.
Add 3 or 4 cloves crushed garlic and one tin of anchovies.
Stir until mixed & heated through.
Add sauce to drained pasta & toss.
Delicious!
