El Conquistador would be an amazing experience... since they have a privte island, Palomino. But trust me, it is going to be very, very expensive. If you can afford it go for it!
If want to consider other less expensive options... here I go:

On the main island, I would recommend Fajardo or Rio Grande (near the Melia Hotel). They have beautiful beaches. On the offshore islands, Culebra's Flamenco Beach is possibly the most beautiful white sand, crystal clear water beach in the region for a wedding.

Unfortunately, one of the best places to have a beach wedding in PR (the Hyatt Dorado, where I had my own beach wedding) is now closed. Scorpionitty mentions Villa Montaña in Isabela -- it is secluded and very romantic.
Besides those options, you can try Copamarina resort in Guanica. A coworker just had his wedding there and all of his family from the states had a great time!

Is one of the best, a lot of celebrities stay there, because it has a 5 star hotel and a very clean beach.
