It's because Americans associate pumpkin with sweet things (such as brown sugar compliments) and don't utilize it as we could (like any other kind of squash). Just simply roasted pumpkin would put off a lot of people just because of what they're "used" to.

although i am not sure if you are asking for recipes, here is a recipe i use for pumpkin pie and it does not call for brown sugar.
Pumpkin Cheese Pie
INGREDIENTS
1 (8 ounce) package cream cheese
2 cups pumpkin puree
14 ounces sweetened condensed milk
3 eggs
1 teaspoon pumpkin pie spice
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Mix cream cheese and condensed milk together until smooth. Stir in the pureed pumpkin, pumpkin pie spice and eggs. Mix until well combined. Pour batter into the pie shell.
Bake at 350 degrees F (175 degrees C) for 45 minutes or until a knife inserted 1 inch from the edge comes out clean. Serve warm.

Not sure abou tthe roast or Sunday issue, but the molasses in brown sugar is a nice complement to the pumpkin flavor for a sweet pie.
