I have 3 black bananas I'd like to use up. If you can supply the recipe and calorie / fat content that would be helpful. Thanks!

Almost No Fat Banana Bread
INGREDIENTS
1 1/2 cups all-purpose flour
3/4 cup white sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 egg whites
1 cup banana, mashed
1/4 cup applesauce
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

LOW FAT BANANA MUFFINS OR BREAD

1 1/4 c. white all purpose flour
1/2 c. whole wheat flour
2 1/4 tsp. baking powder
1/2 tsp. salt
2/3 c. sugar
1 egg or 2 egg whites
3 tbsp. canola oil
2 tbsp. sweet milk
1 tsp. vanilla extract
1-2 bananas, mashed

Mix dry ingredients. Mix liquid ingredients. Combine. Fill greased (Pam) muffin pans 3/4 full and bake 350 degrees for 20 minutes. If making a loaf, bake 45 minutes to an hour. Serve warm. Makes 12 muffins or 1 loaf.

Contrary to how it sounds, buttermilk is indeed a lowfat milk product. You can back down on the nuts a bit, if you like, but they are a healthy (monounsaturated) fat and add fiber and texture to the final product.


Whole Wheat Banana Bread

3 cups flour (2 cups WW and 1 cup white A/P)
1½ tsp baking powder
1½ tsp baking soda
½ tsp salt
2 cups sugar
2 eggs
½ tsp. vanilla extract
1 cup chopped nuts (walnuts, pecans)
1½ sticks butter
1 + 1/8 cups buttermilk
1½ cup mashed bananas

Add all the wet ingredients and beat by hand (I like to hand mash and beat). Then add dry ingredients and mix.

Bake at 350ºF, can use a variety of pans, and works well too with small muffins and small loaf pans. Bake for probably 20-30 minutes but may vary. Just keep an eye on when it looks right to you.

You can always use applesauce instead of oil in muffin or cake recipes. it makes it low-fat and lite-n-fluffy. Yums! Love banana bread!!
