Yes. When coffee is roasted, carbon is created while destroying some of the organic matter. The carbon in coffee is in the gas form of carbon dioxide. That carbon dioxide infuses into the hot water when poured over/through the ground coffee and then carries the oils contained within the coffee out and into your cup, as those oils do not dissolve in water. Coffee is a porous substance and absorbs any aromas around it, but it also lets the carbon dioxide out. Best way to keep your coffee in good condition is to keep it in an airtight container in a dark place at room temperature. Fridge and freezers destroy the carbon dioxide so dont put it in there. Coffee beans in their original sealed bag are at their best for 2-3 weeks maximum, once opened 2-3day and once ground up, about 15-30 minutes. So grind only what you need when you need it and keep it fresh and you will enjoy a good, fresh cup of coffee.

Yes. After roasting:
Whole bean is good for a year when unopened.
Ground coffee is optimally good at 24 hours. - but if stored in an airtight container - it can last *maybe* a week or so.
It will start to lose moisture and flavor.
Putting coffee in the freezer will damage the bean.

It IS organic, so if left alone it could spoil. Are you talking about brewed coffee? If so, then definitely.
If you're talking about ground coffee, it can go stale and if there's moisture, there's the potential for mold.
Either way, coffee should be treated like any edible organic substance once the vacuum-sealed can is opened.

the longer its been in the pot, the stonger the coffee will get and then the flavor is going to suck. The fresher the pot,the better the coffee is going to taste. If your coffee is in a can, bag, make sure its sealed tight, cause yeah it will lose its flavor.

Coffee has oils , and all oils would go rancid over time . (keeping in freezer extends life)
Canned coffees are more processed and have less oil, but would just end up stale . . . kind of like old bread or chips after they've been open too long .

Ground coffee in a container ?? It doesn't go bad unless it's been exposed to moisture and a fungus could grow in it and age lessens the flavor.

YES!! It will loose it's aromas and flavors after a little while. The best thing to do is keep it in a tightly sealed container (like the can it comes in or a ziplock bag) and put it in the freezer. It will stay better longer in the freezer.

It gets stale if it's left out or even in a warm kettle for a long time. Having worked at McDonald's for four years, I can sure tell you that it definitely can get stale...and sometimes surprisingly fast!
