What can I do to protect a camera - is camera/lense choice different?

No - I mean an expensive camera - i.e. to take professional shots but protect equipment from spray, etc

Use a clear plastic bag with the opening sealed against water penetration and the camera inside. If you hold the plastic taut against the lens while taking the shot the focus is not affected. Make certain that the plastic is wiped clear of water before the shot!
Easy & inexpensive.

Buy a waterproof bag and only take the camera out just before taking shots.

Also get a good helm on the camera boat that knows how to get you into position without causing too much spray.

Have a filter for your camera lens.
Zip-Lock bags work well to protect the camera from water when your not shooting. There are also waterproof cases you can buy to protect your camera. Pelican cases work well

These are less expensive than the hard-plastic marine cases; however, they cannot be submerged as deep as the marine cases. But since you are not doing underwater photography, this might be perfect for you.

you can buy a disposable water camera, kodak makes one it's under 10 for 24 shots and works under water
