I bought a large Yam on a whim when shopping the other day. I love them, but rarely cook them myself....

I could really use some interesting ideas?

(Probably to be served with a ham with brown sugar and mustard glaze...)

CINNAMON BAKED YAMS

2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 yams
2 tablespoons butter of margarine, melted

About 45 minutes before serving:

Preheat oven to 350.
In cup, combine brown sugar with cinnamon and salt. Slice yams lenghtwise 1/4 inch thick and place layer in a greased shallow casserole. Sprinkle lightly with some sugar mixture and spoon on the melted butter. Repeat until yams and sugar mixture are used. Bake 25 minutes or untill yams are soft and sugar is bubbly. Makes 2 to 4 servings.


My grandma used to make this and its wonderfully sweet and delicious. Good Luck

This is actually a sweet potato recipe, but try it with your yam.
SWEET POTATO CASSEROLE

2 C. mashed sweet potato
1/2 C. milk
1/4 C. sugar
1/2 tsp. cinnamon
2 eggs
3/4 stick butter
1/2 tsp nutmeg

TOPPING:

3/4 C. crushed cornflakes
1/4 C. brown sugar
4 TBSP. melted butter
1/2 C. finely chopped pecans

Mix all potato ingredients together and put in greased casserole. Bake at 350 for 20 minutes. Add topping mixture, and bake an additional 10 minutes.

This is really yummy....almost like a dessert.

HAWAIIAN HAMS AND YAMS

Cooking spray
Bell pepper, cut in thin strips
20 oz. can pineapple chunks in juice
16 oz. can yams in syrup, drained
1 lb. boiled ham, cut in chunks
1 tbsp. brown sugar
1/4 tsp. cinnamon
2 tbsp. cold water
2 tsp. cornstarch

Spray large skillet. Cook pepper for 2 minutes. Add remaining ingredients, except water and cornstarch. Stir; bring to a boil. Reduce heat; simmer, uncovered, 3-4 minutes until heated through and peppers are crisp tender. Stir occasionally. Mix cornstarch and water until smooth. Stir into skillet; boil about 1 minute until sauce thickens.

Yam is usually a filler to be accompanied by a more interesting dish. In Puerto Rico, we usually boil them in salt and water and eat them with bacalao, which is basically cod fish and onions in red sauce; it's delicious! Here's a recipe for the bacalao:
