Yes, you can - and actually you're supposed to, it's an edible mould. Having said that, I always cut it off because I don't like the taste!

Brie is a soft cow's milk cheese named after Brie, the French province in which it originated (roughly corresponding to the modern département of Seine-et-Marne). It is pale in colour with a slight greyish tinge under crusty white mould; very soft and savoury with a hint of ammonia. The white mouldy rind is tasteless and edible

yes it meant to be good for you but got to admit i use a knife an scrap cheese out an leave rind behind it sure is smelly but the cheese is lovely on crackers .

oh, indeed. I think its the best part. If you melt the cheese, the inside will become thick, smooth, and creamy, but the skin will not-it adds texture and is lovely

Yes, you can and are supposed to. Most Americans have not developed a taste for it, but most Europeans have. As a matter of fact, they like it when it is more ripe (darker).

Of course. It is meant to be eaten WITH the skin. It is actually what gives it its good taste (same with Camembert and the likes).
