To be a successful bartender you need to know your drinks like the back of your hand. People come up with some crazy things & you have to know exactly what they mean without having to flip through a rolodex for ingredients. You also have to make drinks quickly, you'll be busy so you don't have time to waste if you're behind the bar. The more drinks you make, the more money you make. You also have to be able to pour well. Don't waste alcohol, knowing your counts will help ensure you're not increasing liquor costs for your employer. They don't like that & you won't have a job for long. Also, know your employers policy on how to treat "regulars". While it may be illegal to give away alcohol, many companies look the other way when a patron spends a lot of money on a regular basis. Flare is important to SOME places - but you have to be comfortable with what you're doing or you'll break bottles, etc... Don't try it unless you know what you're doing. Practice with plastic bottles first.
Finally, customer service is important, BUT on busy nights you won't have too much time to be chatty with patrons. Focus on the technical aspect & throw in a smile.

Knowing your customer, especially in an establishment with regular clientelle, is #1 for being a successful bartender. If you are working at a place with alot of pass-through clientelle, having chatting skills beyond the weather will get you tips.
For scenario #1 where you have alot of repeat business, you have to know your clients. What they drink, what they like to talk about, what they do for business and pleasure and make yourself knowledgeable about these things.
For scenario #2, with pass through clients, you have to have a basic fund of knowledge about current topics. Ask if they heard about the story on the subprime mortgage market falling apart. Discuss if they want. No bite on that, go for a recreation story, "Do you thing the *insert local team here* will make a showing this year?" You just have to feel out the clients. If you aren't getting much action on basic conversation openers, shift down. If they are drinking a certain beverage, ask about something similar to see if they have tried it, establish some sort of middle ground you can work from.
Do little things, change drenched napkins, point out where the bathrooms are (say something reasonably clever like, if you need the beer recycler, the bathrooms are just down the hallway underneath the BUD neon), ask if they want to see the snack menu. If you are in a tourist town: are you local - do you need any directions or area information (if you know)?
If you are working at a stripper bar, all the above are off the table.

my best advise don't drink when you're working , that's your money you are trying to make and it's best to have a clear head. second the customer is not always right, he is in most cases intoxicated, never argue just get the bouncer. If you are a female use your assets( if you know what I mean ) . If you're a guy flirt and pass out compliments and jokes. In other words you are there to not only serve drinks but entertainment. And last but not least learn to keep you ears open,you may even be entertained yourselves. oh and enjoy the money but bank as much as you can.

Remember customers' names and what they drink. Know how to make those drinks the way they like them-and never be afraid to ask a customer what goes into a drink. You'd be surprised by how many variations there are to each recipe. When in doubt, ask the customer-they'll tell you how THEY like it made.

definately have to say memory....if someone rolls of a long list, it seems so unproffesional to go back and ask or bring them the wrong drink.
the ability to laugh at yourself, you will meet some right people when working behind the bar, who will take the mick out of you. if you can laugh with them or even add to what they said they will even respect you more, be their fave bar tender and if they aren't tight....a larger tip :)
