Want to make fast and cheap calzones with a good dipping sauce....

Nonstick cooking spray or shortening
1 10-ounce package refrigerated pizza dough
1 cup shredded cheddar cheese (4 ounces)
1 cup shredded mozzarella cheese (4 ounces)
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 cup chunky pasta sauce or one 8-ounce can pizza sauce

Directions
1. Preheat the oven to 400 degree F. Line a 12-inch pizza pan with foil and lightly coat with cooking spray, or grease with shortening. Press dough onto foil in pan, forming a 12-inch circle.

2. In a large mixing bowl stir together cheeses. Spoon cheese mixture on 1/2 of the pizza dough. Fold dough over filling to form a half-circle. Seal edges, then use the edge of a spoon to make a decorative edge, if desired. Cut slits for escape of steam.

3. Bake in the 400 degree F oven for 18 to 20 minutes or until filling is heated through and cheese is melted. Cover with foil after 10 minutes of baking to prevent overbrowning. Cool on pan on a wire rack for 5 minutes before serving.

4. Meanwhile, in a small saucepan heat pasta or pizza sauce. Serve the sauce with calzone. Makes 4 servings.

Ingredients:

1 refrigerated pizza crust
1- 6.5 oz. container of Lazy Chef Sundried Tomato & Mozzarella Pesto
½ lb. lean deli ham, sliced thin (sliced turkey works great, too!), divided into 4 portions
¼ lb. Provolone cheese, sliced thin, divided into 4 portions
1 egg white, beaten
1 teaspoon paprika
8 oz. jarred or canned tomato sauce

Easy Preparation:

Preheat the oven to 450 degrees.

Spray a large cookie sheet with cooking spray and unroll the pizza crust onto it.

Using a sharp knife, cut the pizza crust into 4 squares. The dough can be stretched to make rectangles into squares.

Using the back of a soup spoon, spread each square with a thin layer of the Lazy Chef Sundried Tomato & Mozzarella Pesto.

With each square at an angle (to make a diamond shape) place one portion of the ham and one portion of the cheese on each half of the diamond shapes.

Fold the dough over the ham and cheese to make a triangle and using a fork, crimp the sides of the dough together to seal each calzone.

Spread the 4 calzones out on the cookie sheet, if necessary, so that they do not touch each other.

Using a pastry brush, brush each calzone with a little of the beaten egg white and sprinkle each with some of the paprika.

Bake the calzones for 20 minutes until the tops are puffed and golden.

While the calzones are baking, place the tomato sauce in a small microwaveable bowl, and microwave for 1 minute to warm. Stir in the remaining Lazy Chef Sundried Tomato & Mozzarella Pesto.

Serve each calzone with some of the tomato-pesto sauce (in a small bowl for dipping or on top) and a mixed green salad.

The easiest way to make these is to go and buy pizza dough--they now sell them in the freezer section of the supermarket and usually come in packages of 2 or 3, but you can also head over to the local pizzeria and buy it directly from them. Once you have the dough, roll it out. For calzones, I section off the dough and cut it into squares or use a large round cookie cutter. I then fill it with either a mixture of ricotta, basil, egg and cheese or a meat mixture and dot the edge with egg and fold over to seal. Place in a hot oven and bake until golden. For strombolis (which I make a lot more often-it's great when there's company over), I roll out the dough as thin as I can get it into a rectangular shape. I layer salami, mortadella, provolone and mozzarella. Then you roll it all up like a jelly roll. Take a serrated knife and cut it all into pieces about 1 1/2" to 2". Place on a baking sheet and bake until lightly browned.

Real Italian Calzones
INGREDIENTS
1 (.25 ounce) package active dry yeast
1 cup warm water
1 tablespoon olive oil
1 teaspoon white sugar
1 teaspoon salt
2 1/2 cups all-purpose flour, divided
1 teaspoon olive oil
1/2 cup ricotta cheese
1 1/2 cups shredded Cheddar cheese
1/2 cup diced pepperoni
1/2 cup sliced fresh mushrooms
1 tablespoon dried basil leaves
1 egg, beaten
DIRECTIONS
To Make Dough: In a small bowl, dissolve yeast in water. Add the oil, sugar and salt; mix in 1 cup of the flour until smooth. Gradually stir in the rest of the flour, until dough is smooth and workable. Knead dough on a lightly floured surface for about 5 minutes, or until it is elastic. Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40 minutes, or until almost doubled.
To Make Filling: While dough is rising, combine the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl. Mix well, cover bowl and refrigerate to chill.
Preheat oven to 375 degrees F (190 degrees C).
When dough is ready, punch it down and separate it into 2 equal parts. Roll parts out into thin circles on a lightly floured surface. Fill each circle with 1/2 of the cheese/meat filling and fold over, securing edges by folding in and pressing with a fork. Brush the top of each calzone with egg and place on a lightly greased cookie sheet.
Bake at 375 degrees F (190 degrees C) for 30 minutes. Serve hot.

**You can change the filling to suit your taste, like if you want onions and peppers, you can add them.**

Top with your favorite spaghetti sauce.

to make fast ones, just buy ready made pizza dough...roll out to the size you want and fill with whatever filling you want...bake at 400 for 15 minutes or until brown and heated through....use a good jarred marinara sauce for dipping
