300grms of lean pork
8 pitta bread
8small skewers
2 onions
2 firm tomatoes
parsley
rigani (Greek Oregano)
salt
black and red pepper
1/4 cup butter
Dice the meat and sprinkle with salt and pepper and rigani.
Divide the pieces of meat into eight and put onto skewers individually.Put them to cook on the grill.
Chop the onions and the parsley.Cut the tomatoes into thin slices.
Cook the pittas one by one on the grill,coating them with butter.
When the meat is tender put them on the pitta and slowly draw out the skewer leaving the meat on the pitta.
Add the onion parsley and tomato sprinkle with red pepper.
Roll up the pitta bread.
Alternatively leave meat on skewers and serve with a Greek salad.

INGREDIENTS
1 lemon, juiced
1/4 cup olive oil
1/4 cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
4 pounds pork tenderloin, cut into 1 inch cubes
2 medium yellow onions, cut into 1 inch pieces
2 green bell peppers, cut into 1 inch pieces

DIRECTIONS
In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

Souvlaki or kebabs can be made with whatever you like.For the authentic Greek flavour marinade in olive oil with mediteranean herbs like mint and basil or thyme.Garlic is important too.
Serve with rice,roasted veg and greek salad.
